The coffees from Indonesia are rich and earthy coffees. Sumatra is a large Island that is part of Indonesia. Often grown under a jungle canopy, and nurtured by volcanic soil these coffees are able to take a darker roast without losing their local flavors. This Sumatra coffee has a slight aroma of Fruit and tea. The Flavors are a Black tea like flavor with a touch of Cocoa.
Ethiopia has quite a few fantastic growing regions that show up in my cart when buying beans. This region of Sidama has the ability to grow delicious coffee that is able to be roasted lighter. Light roast means more caffeine more local flavors of the area that are not given to the coffee while roasting. This coffee has an aroma of strawberry, and a little bit citrus. The flavors pop with this coffee since it was naturally processed. Darker roast will give this a chocolate flavor.
Guatemala coffee is consistently a favored fall coffee for me, and the Huehuetenango region is also one of my favorite Guatemala coffee regions. The coffee roasts well, and is often very distinct in flavors depending on the level of roast you give the coffee. I have roasted this coffee to a full City+ (Medium roast). This coffee has an amazing aroma that smells like toffee and brown sugar. The Flavor is milk chocolate and maybe just a hint of vanilla.
